Dining Room Line Cook


General Outline of Responsibilities:
We are looking for a professional line cook to join our team and assist in the operation of our recently renovated signature restaurant - Fireside Dining Room and Terrace. This position will be responsible for the food preparation of a new menu and the set up of line stations supporting the dining room kitchen operation. Line cook duties will consist of assisting the executive and sous chef with their daily tasks. The successful candidate will play a key role in contributing to our customer satisfaction, while achieving departmental goals.

Detailed Responsibilities:
• Set up and stocking stations with all necessary supplies
• Prepare food for service (e.g. chopping vegetables, butchering meat, or preparing sauces)

Summary of Responsibilities:
Reporting to the Managing Director responsibilities and essential job functions include but are not limited to the following:
• Solicit new accounts to meet and exceed revenue goals through telephone prospecting, outside sales calls, site inspections, event attendance and written communication.

BANQUET SUPERVISOR

General Outline of Responsibilities:

The Banquet Supervisor is responsible for assisting with overseeing the co-ordination of all functions, banquets, guest inquiries, team supervision and other related activities. The successful candidate must have a sincere desire to provide excellent customer service in a high volume environment while maintaining a motivated and organized workplace for the employees.

Detailed Responsibilities:

  • Provide leadership, direction, training and support to banquet servers, bartenders and other Food & Beverage employees.
  • Help to prepare work schedules.
  • Help maintain and enhance employee morale and a culture of excellence.
  • Check and maintain service standards and food presentation standards.
  • Assign and instruct servers regarding their duties and conduct pre-function briefings. Ensures all opeing and closing checklist are completed.
  • Directly assist with functions including set through completion.
  • Follows direction well and is open to feedback and criticism.
  • Ensures safe and responsible service of alcohol. ID’s guests. Refuses alcohol service to intoxicated guest.
  • Assists in Banquet Server duties when needed.

  • Setting up and tearing down of banquet and conference rooms. Lifting and moving of tables and chairs is required
  • Keep banquet rooms, conference facilities and service stations sanitized and tidy.
  • Assist with administrative requirements of the Food & Beverage Department.

General Qualifications:

Catering & Conference Services Manager


At Elk Ridge Resort, our engaging service and authentic location make every event a truly memorable affair. As Conference Services Manager, you will liaise between multiple departments to anticipate the needs – and exceed the expectations – of your clients.

Responsibilities:
Reporting to the Managing Director responsibilities and essential job functions include but are not limited to the following:
• Conduct tours and site inspections with potential clients
• Responsible to book and service general catering inquiries and group business
• Hours of work may vary based on business demands as required
• Responsible to solicit from and confirm with client all information pertaining to the event they are planning and to organize and disseminate information to all departments through event orders, and resumes in a professional and timely manner
• Working with booking guidelines and minimum revenues to ensure they are met
• Respond to inquiries that arrive via fax, telephone, email or walk in clients in a professional and timely manner
• Assist clients in meeting their expectations both conceptual and monetary while keeping in mind food costs, labour costs and hotel operations
• Assist the client to coordinate with outside suppliers, including entertainment, audiovisual, décor and floral
• Responsible for organization and supervision of assigned functions and guestroom blocks from date of booking to departure
• Prepare banquet event orders for business booked and follow up with client on day of function, and complete follow up call after the event
• To obtain guarantees of food and beverage for Banquets and the Kitchen. Must advise if any deviation in number, so labor and food cost can be controlled
• To communicate with client to ensure they are aware of and comply with hotel accounting policies
• Conduct pre-conference meetings to ensure key departments are fully aware of pertinent details pertaining to group upon their arrival
• To daily yield guest room and meeting space to their optimum potential through the use of Maestro
• Create floor plans for the best use of space for each event
• Be knowledgeable of liquor and fire safety laws and regulations
• Attend meetings to review event contracts to ensure last minute changes are communicated with Banquets, Front Desk, Housekeeping, Culinary, and all other affected departments
• Work closely with Group Sales Managerto ensure all contractual terms agreed upon are carried out and to maximize function space for the highest profitability for the Hotel
• Establish good business and social relationships within the industry and participate in activities related to public relations to further increase sales leads for the department as well as the Hotel
• Utilize Maestro Property Manager to track, solicit bookings, produce BEOs and follow up on accounts
• Help to achieve departmental monthly forecast and yearly budget and goals

Qualifications:
• Minimum 2 year experience in hotel catering, additional experience in sales/hospitality required
• Extensive knowledge of MS Office and Maestro preferred
• Proven organizational, interpersonal and communication skills required
