Outlets Manager - Food & Beverage

Department: Food & Beverage
Reports To: Director of Food & Beverage

General Outline of Responsibilities:
To be responsible for leading a high performing team in all aspects of food and beverage operations. As a leader in Food and Beverage, they will be expected to maintain all aspects of the guest experience. Effectively oversee the daily operations of Elk Ridge Resort Food and Beverage service operations. Provide support and guidance to fellow employees while ensuring a positive work environment and providing exceptional guest experiences. To ensure consistently high satisfaction of these products through established procedures and guest contact, including the motivation of employees to the highest degree, such that company profit ratios and control procedures are met.

Detailed Responsibilities:
• Management of all outlets: Fireside Dining Room, Walleyes Pub, Banquets and Pavilion.
• Responsible for monthly staff scheduling and payroll for the F&B department. Adherence to labor cost budgets.
• Communicate all changes within the F&B department.
• Communicate the information to the kitchen and other supportive departments prior to and during events and service times.
• Works with the Director of Food & Beverage in development and maintenance of all policies, procedures, training and quality standards within the front of house F&B department, utilizing a continuous improvement approach to ensure a high quality cost effective and customer focused operation.
• Manage the inventory, control the breakage/loss reduction of china, glass and silver as it relates to outlet and banquet services.
• Provide daily support and guidance to fellow F&B personnel, as well as monitor job performance, to ensure a successful experience by our guests.
• Inspect and oversee the cleanliness and maintenance of all F&B space, public areas, and service areas of the F&B department. Coordinate with Housekeeping and Maintenance to ensure highest level of product delivery.
• Under the guidance of the Director of Food & Beverage, assist in monthly and annual budgeting, as well as monthly reports and forecasting.
• Assist in the planning of special events, menus and recipes as required by the Director of Food & Beverage.
• Continuously monitor and communicate house account, VIP lists and functions in advance of daily operations.
• Recommend new procedures by which to achieve short and long term goals of improving the service of our customers.
• Introduce and recommend preferred vendors as determined with the revenue goal of the property.
• Attend all department and resort meetings, as necessary.
• Ensure that a close relationship within all areas of F&B is consistent to ensure proper and smooth communications throughout the entire department.
• Maintain close working relationship with all other operation departments and their supervisors to improve the climate of cooperation for the overall improvement of the resort.
• Ensure all decisions are made that correspond to those policies of Elk Ridge Resort and its Executive Committee.
• Attend to guests’ concerns and the operation problems immediately and take proper, prompt, corrective action.
• To provide advice and inspiration to all F&B personnel that will aid them in the proper function of their respective roles.
• Conduct in a manner as to reflect Elk Ridge Resort’s standards and encourage our staff to do the same.
• Recruitment and training of staff.
• Exemplary leadership and management of health and safety program.
• Working with onsite software and systems to manage inventories and food costs that are in line with the budget.
• Other duties as assigned.

General Qualifications:
• Strong communication skills, both verbal and written.
• Basic computer skills in Word, Excel, Outlook.
• Experience with restaurant oriented POS systems.
• Excellent customer service, interpersonal, sales related and conflict resolution skills.
• Exceptional organizational and supervisory skills.
• Able to prepare and analyze data, figures and transcriptions.
• Exceptional food and beverage knowledge and pricing.
• Knowledge of wine, wine storage and service and specialty beverages.
• Serve It Right
• Minimum of 6 years food and beverage experience in a high quality, professionally dedicated environment.
• Minimum of 3 years management or supervisor experience is required.
• A sound understanding of fine dining.
• Experience in a four star hotel or resort is recommended.
• Experience in inventory taking and recording.
• Experience in liquor ordering, controlling, receiving and delivery.
• Experience in planning, preparing and service training.
• Physically fit, able to perform repetitive physically challenging tasks and lift heavy loads.
• Mentally fit for the challenge of working in a high pressure environment.
• Working knowledge of federal, provincial and local laws governing equal employment opportunity and civil rights, occupational safety and health, wage and hour issues and labor relations.

Sous Chef

Department: Kitchen
Reports To: Chef de Cuisine/Executive Chef
General Outline of Responsibilities:
To be responsible for supporting the leadership of a high performing team in all aspects of food operations. As a leader on the Food and Beverage team, they will be expected to maintain all aspects of the guest experience in Food and Beverage.

Detailed Responsibilities:

  • Leading a high performing team with a strong work ethic, team work and initiative.
  • Assist in organizing, directing, evaluation and development of the culinary team.
  • Assist in menu development.
  • Assist in product ordering, storage and inventory.
  • Coach, mentor and develop employees of culinary team.
  • Assist in scheduling.
  • Performance management; monitor staff performance and provide feedback to the team and Executive Chef.
  • Exemplary leadership and management of the health and safety program.
  • Participate as a part of high functioning management team in all aspects of the operation of the resort.
  • Assist in Culinary Management of all outlets to include: Fireside Dining Room, Walleye’s Pub, Banquets and Pavilion. Assist in cooking in all outlets when necessary.
  • Assist in coordination of any banquet and conference services to achieve aims of the department.
  • Working with onsite software and systems to manage inventories and food costs that are inline with the budget.
  • Work directly with team to achieve the goals and needs of the property.
  • Advise Executive Chef of required repairs, replacements or maintenance of all equipment as required.
  • Attend management meetings as required.
  • Maintain a high standard of kitchen cleanliness.
  • Other duties as assigned.


    General Qualifications:

  • Minimum 2 years experience as Sous Chef, Junior Sous Chef or Chef de Partie preferred.
  • Culinary school, program or equivilant graduate.
  • Problem solver. Works well under pressure.
  • Has knowledge and experience in all aspects of kitchen: Cooking, baking, butchery, fine dining, banquets.
  • Calm and level headed. Handles stress well.
  • Clearly demonstrates strong leadership abilities in a team atmosphere.
  • Effective written and oral communication and problem-solving skills.
  • Ability to train, coach, mentor and inspire staff members.
  • Strong leadership and communication skills (written and verbal).
  • Must be available to work weekends and statutory holidays.
